We had the pleasure and honour to host the annual meeting of the group “KITCHENS OF THE WORLD” with the Chef Regina Aspiras from Philippines. This group of VIP foodies have the privilege to travel around the world with their famous Chef to experience the cuisine of each region they visit.
Oaxaca was the highlight of our tour. Oaxaca is such a vibrant place full of colour, tradition and the most the delicious food. Of course we couldn´t miss the culture. We visited the workshop of Jacobo & Maria where you can find the most exotic and fantastic alebrijes and learn how they make them. Also the candle workshop of Maria Angeles where you can see how she creates the candle from the very scratch.
Going back to our main topic, you cannot miss “Casa Oaxaca” a must from the chef Alex Rodriguez and from this very gifted family there is also “Portozuelo” the sustainable farm and rustic open restaurant run by Lulu with lots of tasty dishes and a very special purpose to integrate the local community into the project. Special mentioned to Barbacoas de Mexico from the chef Jesus (brother or this gifted family) with and incredible barbacoa and consome for breakfast. We cannot forget La Teca Istmeña food, from el Itsmo de Tehuantepec. Is difficult to describe all the flavors going on in Esperanzas kitchen. Just amazing!!
Yucatan is always such a joy and pride to show it. First of all “The Haciendas” Wow! Our guests visited Hacienda Santa Rosa de Lima one of our favorites of IHG Group. We are always so pampered and the staff is the best. Our group loved it from the very beginning. First they were greeted with s sikil pak a pumpkin seed spread that can never go wrong. Then the went to their room: Antique and luxury well preserved room where you time travel to the Henequen splendor. At the time of the dinner the Hacienda chef prepared such a tasty dinner. All Yucatecan specialities with a delicious Xtabentun cocktail and finalized with chessee and pumpkin seed ice cream . Just yummy. A perfect end of the day at the Hacienda.
Next day we started with early bird watching, botanical garden and a vigorous breakfast to start the day because, here comes the best part: we had a Special class with the chef Wilzon Alonso, the Yucatecan awarded chef gave us a full day private class in his cozy, beautiful smoke kitchen. We met at the local market to carefully choose the ingredients for a Pollo pibil, sopa de lima and kibbies. The most fabulous ambience with music, the chefs guidance and joy. And when the chicken came out of the pib (whole in the soil to bake to perfection) we finally seat all together and shared this meal. Unforgettable experience!! The day finalized with a energy cleansing of Fatima who took all the bad energies from your body for a full and deserved rest. So the next day we would go to Chichen Itza, and on our way to Cancun we pass by la tia de Kaua. The best Poc Chuc and Longaniza from Valladolid in the world. Wood fire kitchen with handmade tortillas, beans and salsa. Nothing else is needed.
It´s big, is messy, is crowded, is Mexico City!! but is still one of our favorites because is unique and wonderful. We couldn´t skip it. It is the hearth of Mexico. Here we visited the Basilica of Our Lady of Guadalupe an incredible spiritual experience. Such a beautiful place full of faith.
Las Trajineras of Cuemanco that we visited is the folklore spirit of Mexico city. This colorful boat in the canal with the mariachis singing the most famous Mexican music and the traditional antojitos, quesadillas, esquites everything fresh from la milpa. Then Coyoacan, just the great bohemian vibe of one of the oldest neighbourhoods of Mexico City. And the getting close to the end of our culinary journey we visited Teotihuacan – The magnificent pyramids of the moon and the sun.
The last superb highlight of Mexico City was the chance to meet the ambassador of Philippines. Such a great opportunity where many issues and advantages of both countries were discussed. Such a fruitful meeting.
With this we end our story. This tour will stay with us forever. Such an honour to host such a beautiful, kind and gentle hearth people. Thank you Kitchens of the world! Until our next adventure….
